Prep: 10 minutes | Cook: 15 minutes | Total: 25 minutes | Serves: 2 servings
Peppery radish microgreens cut through the richness of salmon and avocado without needing a complicated sauce. Warm rice, crisp vegetables and a punchy sesame dressing make this a colorful weeknight meal that feels like your favorite neighborhood lunch spot.
Ingredients
- 2 salmon fillets (about 5 oz each)
- 2 cups cooked jasmine or brown rice
- 1 small cucumber, thinly sliced
- 1 avocado, cubed
- 1 medium carrot, grated
- 1 loosely packed cup Radicle Roots radish microgreens
- 1 tablespoon soy sauce or tamari
- 2 teaspoons toasted sesame oil
- 2 teaspoons rice vinegar
- 1 teaspoon honey or maple syrup
- 1 teaspoon neutral cooking oil
- Sesame seeds and lime wedges, for serving
How to Make It
- Whisk soy sauce, sesame oil, rice vinegar and honey in a small bowl. Reserve half for dressing.
- Heat neutral oil in a skillet over medium heat. Cook salmon about 4–6 minutes per side, depending on thickness, until the center reaches 145°F (63°C).
- Divide warm rice between two bowls. Add cucumber, avocado and grated carrot.
- Flake or cube the cooked salmon and place on the rice. Spoon over the reserved dressing that did not contact raw fish.
- Add generous handfuls of radish microgreens, a sprinkle of sesame seeds and a squeeze of lime just before eating.
Why We Love Radish Microgreens
Radish microgreens bring natural pepperiness and are part of the brassica family, whose vegetables contain glucosinolates. Like other edible greens, they also contribute plant-derived nutrients and variety to meals. Exact nutrient levels vary by cultivar and harvest.
Radicle Roots Kitchen Tip
For maximum contrast, keep the rice and salmon warm but the radish microgreens chilled until plating.
